What you need:
  • 250g punnet strawberries
  • 2 teaspoons honey
  • 4 bamboo skewers 
  • 1/2 cup natural muesli 
  • Extra honey, to serve 
  • 1 medium green apple, peeled, cored 
  • 1 cup frozen raspberries, thawed 
  • 4 x 40g Honey and Oat All-Bran baked bars
  • 400g low-fat vanilla yoghurt

What to do:
  1. Set aside 2 strawberries for garnish. Remove tops from remaining strawberries. Cut into quarters. 
  2. Grate apple into a bowl. Add strawberries, honey and raspberries. 
  3. Stir until combined. 
  4. Divide half the fruit mixture evenly into the base of serving glasses. 
  5. Using your hands, tear bars into bite size pieces in a large bowl. 
  6. Place half the bars on top of the fruit mixture in the glasses. Then spoon half the yoghurt over the bar layer. 
  7. Repeat layers with remaining fruit, bars and yoghurt. 
  8. Refrigerate glasses until ready to serve.
  9. To serve, insert a skewer into the base of each strawberry half. 
  10. Sprinkle tops of parfaits with muesli. Drizzle with extra honey. Place strawberry skewers into parfaits to decorate.
