What you need:

- 1 tub softened ice cream, (use your favourite flavour)
- 8 wafers or your fave thin biscuits
- Hundreds and thousands, or chocolate sprinkles
- Line a lamington or slab tin with baking paper.
- Spread the ice cream over the tin and smooth the top with a spoon dipped in hot water. It should be about 5cm thick. Return to freezer to harden.
- Remove from freezer and tip out onto another sheet of baking paper on the bench top. Cut out pieces to fit the wafers.
- Place a wafer/biscuit on top and on the bottom of each ice-cream slice.
- Dip the sides of the ice cream sandwich in sprinkles.
- Place ice cream sandwiches on a small tray and freeze until firm.
