What you need:
- 1 ¾ cups self-raising flour
- 2 teaspoons ground cinnamon
- 25g cold butter, chopped
- ¾ cup buttermilk
- 1 tablespoon honey
- Extra 1 tablespoon self-raising flour
- Softened butter and extra honey, to serve
- Pre-heat oven to 200C. Grease and line an oven tray with baking paper.
- Sift flour and cinnamon into a large bowl. Add butter. Using your fingertips, rub butter into flour until coarse crumbs form. Add buttermilk and honey. Stir with a wooden spoon until a soft dough forms. Turn dough out onto a lightly floured surface. Knead for about 2 minutes, or until smooth.
- Divide dough into four equal portions. Shape each portion into 2cm thick rounds. Place on prepared tray. Dust with extra flour. Using kitchen scissors cut a small cross on top of each round.
- Ask an adult to help you place tray in oven. Cook for about 10 minutes. Reduce oven temperature to 160C. Cook for a further 10, or until golden. Stand on tray for 5 minutes.
- Serve warm with butter and honey.
Tip: Try your favourite spread on the damper rolls, we love putting some yummy honey on them.
