Butterfly Cupcakes Recipe

Coles puts a twist on this delicious classic!
Butterfly Cupcakes Recipe

What you need:
  • 1 packet Coles Create & Bake vanilla baking mix
  • 2 eggs
  • 60g butter, melted
  • 125ml milk
  • 12 Coles Create & Bake large pink gigham patty pans
  • 12 hole muffin tin
For icing:
  • 1 packet Coles Create & Bake pink decoration sugar
  • 8 flavoured musk sticks
  • 1 Chocolate Icing pen
  • Coles Create & Bake pink pearls
  • Coles Create & Bake butterflies

What to do:
  1. Preheat oven to 180˚C (160˚C fan forced).
  2. Line a standard 12-hole muffin tin with large patty pans.
  3. In a large bowl, combine the baking mix, eggs, butter and milk.
  4. Using an electric mixer, mix on low speed for 30 seconds or until combined. Increase speed to medium high and mix for a further two minutes.
  5. Pour mixture into patty pans, taking care not to overfill.
  6. Bake for 20-25 minutes or until a skewer inserted in the centre comes out clean.
  7. Allow to cool for five minutes before transferring to a wire rack to cool completely.
  8. Prepare the icing mix as a glaze, mixing with boiling water to get a runny consistency.
  9. Gently slice a circular piece from the top of each cake, cutting it in half to create wings.
  10. Sprinkle with pink decorating sugar.
  11. Ice the tops of the cakes around where the circles have been removed.
  12. Fill each cupcake centre with some cream.
  13. Position tops of the cupcakes into the cream to create wings.
  14. Trim six musk flavoured sticks lengthways in half to create the body.
  15. Cut 24 very thin strips out of remaining sticks to create antennae.
  16. Arrange a body piece down the centre of each cake.
  17. Using the icing pen, gently make a heart shape on each side of the wing and a small dot for each eye.
  18. Decorate the insides of the hearts with the pink pearls.
  19. Using icing, attach two antennae per butterfly and decorate under the wings with the butterflies.
