Pool Party Jelly Cake Recipe!

Super easy, super tasty jelly dessert recipe!
Prep time: 1 - 2 hours
Chill Time: 3 - 4 hours
No. of serves: 8
What you'll need:
  • 1 x 470g packet vanilla cake mix with icing
  • 1 x 85g packet Aeroplane Original Berry Blue Jelly
  • 3 x 125g packet white chocolate coated biscuit fingers
  • Assorted lollies to decorate pool

What to do:

  1. PREHEAT oven to 180C (150C fan forced) and line a 20cm round cake tin with greaseproof baking paper.
  2. PREPARE packet cake according to directions then spoon mixture into prepared tin.
  3. BAKE in oven for approximately 35-40 minutes or cooked when tested. Turn cake onto a wire cake rack and allow to cool before decorating.
  4. COMBINE jelly crystals and 1 cup (250ml) boiling water in a medium heatproof bowl. Stir until crystals dissolve. Then add 200ml cold water. Cover in plastic wrap and REFRIGERATE until firm set 2-3 hours.
  5. BEAT cake icing as directed on pack instructions. Set aside.
  6. PLACE cake onto cake stand and spread sides, top and edge of cake with prepared icing.
  7. ARRANGE biscuit or musk sticks evenly around cake, trimming if necessary to create a pool wall; leave about 5cm opening for ladder.
  8. MASH set jelly with fork and spoon onto cake to represent water.
  9. BUILD a ladder with musk sticks and icing to hold together.
  10. ADD lollies and Umbrella to pool to decorate.
TO SERVE: keep cake in refrigerated until ready to cut and serve in slices.
