Tuna & Rice Balls Recipe

Make these delish savoury snacks for a party!
Tuna Rice Balls Recipe

What you need:

  • ½ cup plain flour
  • 2 eggs, lightly beaten
  • 1 cup dried breadcrumbs
  • Mayonnaise, to serve
  • 250g bag microwaveable jasmine rice
  • 185g can tuna in spring water, drained
  • 1 cup grated tasty cheese
  • 1/3 cup dried breadcrumbs
  • ¼ cup finely chopped fresh chives
  • 1 egg, lightly beaten

What to do:

  1. Pre-heat oven to 200C. Grease and line a large oven tray with baking paper.
  2. To make filling, cook rice according to packet directions. Cool.
  3. Place in a large bowl with tuna, cheese, chives, breadcrumbs, egg and bacon. Use your hands to mix well. Roll level tablespoons of mixture in balls to make 24.
  4. Pour eggs into a shallow dish and breadcrumbs on a dinner plate. Dust balls, one at a time, in flour. Shake off excess. Roll in egg, then in breadcrumbs. Place on prepared tray. Spray with cooking oil to coat all over.
  5. Ask an adult to help you put tray in oven. Cook for about 20 minutes, turning balls halfway, or until golden brown. Remove. Cool for 10 minutes and serve with mayonnaise.

I used 2eggs in the mixture and ignored the bacon which wasn’t listed in ingredients

I'm sorry but the recipe does not make sense. 1 or 2 eggs go into the mixture? Bacon? 1 cup or 1/3 cup breadcrumbs go into the mixture? Please re-write this or remove the recipe. Thank you.
