Tropical Popsicles Recipe!

Beat the Summer heat with these easy, sweet treats.
What you need:

  • 2 ripe mangoes
  • 1/4 cup fresh passionfruit pulp
  • 1/4 cup fresh orange juice
  • 1 cup of yoghurt
  • 12 paddlepop sticks

What to do:
  1. Ask an adult to help you cut cheeks off mangoes. Remove and discard the skin. Place flesh in a small food processor and process until smooth. Transfer to a medium bowl and add passionfruit, fresh orange juice and yoghurt. Stir until combined.
  2. Divide mixture into two x 6-hole iceblock molds. Wrap firmly in plastic. Using a small knife or scissors, get a parent to help you make an incision large enough to poke a paddle pop stick through in the centre of each ice-block mold. Carefully insert a paddle pop stick through each incision. Freeze overnight.
  3. Remove plastic. Stand at room temperature for five minutes, then dip bases of molds into warm water to remove.
Tip:
Lactose intolerant TGs can use CoYo yoghurt, which is made from coconut flesh instead of milk - available at all good health food stores.
